Egg Fried Noodles

This is the meal you make when the takeaway app is open and you are about to spend £15 on something that will arrive cold in 45 minutes. Egg fried noodles take 10 minutes, cost 65p per portion and hit every spot that a £9 box of takeaway noodles does. The only thing you need is soy sauce and noodles – everything else is flexible.

Egg Fried Noodles

Ready in 10 minutes with store cupboard ingredients. Egg noodles, soy sauce and whatever vegetables you have - this is faster than waiting for a delivery and costs a fraction of the price.

Ingredients
  

  • 200g medium egg noodles
  • 2 eggs
  • 1 carrot, cut into thin strips
  • 50g frozen peas
  • 2 tbsp soy sauce
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
  • spring onions to garnish

Method
 

  1. Cook the noodles according to the packet instructions. Drain and rinse with cold water.
  2. Heat the vegetable oil in a wok or large frying pan over a high heat.
  3. Add the carrot strips and stir-fry for 2 minutes. Add the frozen peas and cook for 1 minute.
  4. Push the veg to one side. Crack the eggs into the pan and scramble quickly.
  5. Add the drained noodles and soy sauce. Toss everything together over a high heat for 2 minutes.
  6. Drizzle with sesame oil, top with sliced spring onions and serve immediately.

Tips and Variations

Use any veg you have – cabbage, beansprouts, pepper, mushrooms all work. Add leftover chicken or a handful of prawns to make it more substantial. Sriracha or sweet chilli sauce on the side is a game changer.
