Slow Cooker Sausage and Bean Stew
This is the kind of meal that makes a slow cooker worth every penny. Six budget sausages and a tin of butter beans turn into a rich, thick stew that tastes like it simmered all day – because it did, while you got on with your life. At 65p a portion it is hard to beat for a proper hot dinner.
The smoked paprika is the secret ingredient here. It gives the tomato gravy a depth that makes you think of chorizo without the price tag. Use whatever sausages are on offer – the ones at around 60p for a pack of 6 work perfectly.

Method
- Brown the sausages in a frying pan for 3 to 4 minutes - they do not need to be fully cooked through.
- Transfer the sausages to the slow cooker. Add the butter beans, chopped tomatoes, onion, garlic, tomato puree, paprika and mixed herbs.
- Crumble the stock cube into the hot water and pour over the top. Stir everything together.
- Cook on low for 4 hours or on high for 2 hours.
- Serve in bowls with crusty bread or over rice.
Tips and Variations
If you do not have a slow cooker, bake this in a covered dish at 150C for 2 hours. Add a diced carrot and a stick of celery for extra veg. Leftovers are even better the next day – the flavours deepen overnight.
