One Pot Tomato and Butter Bean Stew
Butter beans are one of the most underrated storecupboard ingredients in British cooking. They are cheap, filling and packed with protein and fibre. A 400g tin costs around 65p in most UK supermarkets, making them one of the best value ingredients you can buy.
This stew takes the humble butter bean and pairs it with a rich tomato sauce, smoked paprika and fresh spinach. The result is a meal that tastes like it has been simmering for hours but actually takes just 25 minutes. Serve it on its own for a light lunch, or with crusty bread or rice for something more substantial.

Method
- Heat the olive oil in a large pan over medium heat. Add the diced onion and cook for 5 minutes until soft.
- Add the garlic and red pepper, cook for another 3 minutes until the pepper starts to soften.
- Stir in the smoked paprika and oregano, cook for 30 seconds until fragrant.
- Pour in the chopped tomatoes, butter beans, stock cube and water. Stir well and bring to a simmer.
- Cover and simmer for 15 minutes, stirring occasionally, until the sauce has thickened.
- Stir through the spinach until wilted, season with salt and pepper, and serve hot.
Tips and Variations
Butter beans can be swapped for cannellini beans or chickpeas if you prefer. For a richer sauce, add a tablespoon of tomato puree when you add the paprika. This stew freezes brilliantly – make a double batch and freeze portions for quick weeknight dinners. If you want to add some heat, a pinch of chilli flakes works well.
