Manchester Tart

The Manchester tart is pastry, jam, thick set custard and a scatter of desiccated coconut, and for anyone who grew up within reach of the city it is the taste of school dinners in one slice. It was standard on dinner trays across the North West for most of the twentieth century, a thrifty pudding built from a few tablespoons of jam, milk and custard powder. The whole tart costs about £2.05 and cuts into eight slices at around 26p each. The banana debate splits the region: some school kitchens laid slices under the custard, others never did, so the recipe keeps it optional and lets you pick a side.

Ingredients
  

  • 150 g plain flour
  • 75 g cold butter, cubed
  • 1 tbsp caster sugar
  • cold water, to mix
  • 4 tbsp raspberry jam
  • 2 tbsp custard powder
  • 2 tbsp caster sugar
  • 500 ml whole milk
  • 2 tbsp desiccated coconut
  • 1 banana, sliced (optional)
  • 1 glace cherry, halved (optional)

Method
 

  1. Heat oven to 190C (170C fan). Rub the butter into the flour until it resembles breadcrumbs, stir in the sugar, then add just enough cold water to bring it into a dough. Roll out and line a 20 cm tart tin, prick the base all over and chill for 15 minutes.
  2. Line the pastry with baking paper and baking beans, and bake blind for 12 minutes. Remove the paper and beans and bake for another 5 to 8 minutes until the base is dry and pale golden. Cool completely.
  3. Warm the jam briefly so it spreads easily, then spread it over the base in an even layer. If you are using banana, lay the slices over the jam now.
  4. Make the custard: whisk the custard powder and sugar with 3 tablespoons of the milk in a small bowl, then heat the rest of the milk until just simmering. Pour the hot milk over the powder mix, whisking, return it all to the pan and cook for a minute until it is a thick pouring custard.
  5. While still hot, pour the custard over the jam layer, level the top and chill for at least 3 hours until set. Scatter the coconut over the top just before serving, placing the halved glace cherries in the middle if using.

Tips and Variations

Custard powder sets the filling firm enough to slice, so do not swap it for fresh pouring custard. A tin of evaporated milk made into custard is a richer old-school option for the same price. The tart keeps for 2 days in the fridge, and the pastry stays best if the coconut goes on at the last minute. Strawberries and cream on top turns it into a Manchester trifle for a special occasion.
