Creamy Mushroom and Garlic Toast

Mushrooms are one of the best value ingredients in the supermarket when you know what to do with them. A 250g pack of chestnut mushrooms costs about 90p and makes a proper meal when you pair them with cream, garlic and good toast. This is the kind of thing gastro pubs charge £9 for and it takes 15 minutes to make at home for 65p a portion. The trick is getting the mushrooms properly golden before adding the cream – that is where all the flavour comes from.

Tips and Variations

Do not wash mushrooms – wipe them with a damp cloth or kitchen paper instead. Water makes them soggy. Use any mushrooms you like – button mushrooms work fine and are even cheaper. No double cream? A spoon of creme fraiche or natural yoghurt stirred in at the end works too. Serve with a side salad if you want to make it more of a meal.
