Sausage and Egg Breakfast Baps

Budget sausages are absolutely fine here – you are pairing them with egg and sauce so the quality is less critical than if you were eating them alone. - Heat the oil in a large frying pan over medium heat. Add the sausages and cook for 10-12 minutes, turning regularly, until browned and cooked through.
- Once the sausages are nearly done, push them to one side of the pan. Crack the eggs into the empty side and fry to your preference - sunny side up or flipped.
- Slice the bread rolls in half and lightly toast under the grill or in a dry pan.
- Spread brown sauce or ketchup on the bottom half of each roll.
- Place two sausages, a slice of tomato and a fried egg in each roll. Season with salt and pepper.
- Top with the other half of the roll and serve immediately.
Tips and Variations
Cook the sausages slowly over medium heat so they cook through without burning outside. If your frying pan is large enough, cook all four eggs at once alongside the sausages to save time. Add a slice of cheese for about 10p extra per portion if you want to make it extra indulgent.
