Sausage and Egg Breakfast Baps

A proper breakfast bap with sausages and eggs that costs a fraction of what you would pay at a cafe. Ready in 15 minutes and filling enough to keep you going until lunch.

Ingredients
  

  • 8 sausages (budget pack)
  • 4 eggs
  • 4 bread rolls or baps
  • 1 tomato, sliced
  • 2 tbsp brown sauce or ketchup
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Method
 

  1. Heat the oil in a large frying pan over medium heat. Add the sausages and cook for 10-12 minutes, turning regularly, until browned and cooked through.
  2. Once the sausages are nearly done, push them to one side of the pan. Crack the eggs into the empty side and fry to your preference - sunny side up or flipped.
  3. Slice the bread rolls in half and lightly toast under the grill or in a dry pan.
  4. Spread brown sauce or ketchup on the bottom half of each roll.
  5. Place two sausages, a slice of tomato and a fried egg in each roll. Season with salt and pepper.
  6. Top with the other half of the roll and serve immediately.
