Cheesy Tortilla Wrap Bake
This cheesy tortilla wrap bake is one of those recipes that feels like a cheat code for feeding a family on a budget. By layering cheap flour tortillas with baked beans and cheese, you get something that eats like a lasagne but costs a fraction of the price.
The tortillas go slightly crispy at the edges while the middle stays soft and gooey. The bean and tomato mixture soaks into them as it bakes, creating layers that hold together beautifully when you cut into it.
At about 55p per portion, it is hard to find a cheaper dinner that still feels like a proper sit-down meal. Serve with a simple salad on the side if you have one, or just enjoy it as is.

Method
- Preheat the oven to 200C / 180C fan / Gas Mark 6.
- Mix the baked beans, chopped tomatoes, onion, cumin and chilli powder together in a bowl.
- Spread a spoonful of the bean mixture on the bottom of an ovenproof dish.
- Lay one tortilla on top and spread with a third of the remaining bean mixture.
- Sprinkle with a handful of grated cheese.
- Repeat with two more layers of tortilla, bean mixture and cheese.
- Top with the final tortilla, the last of the cheese and any remaining bean mixture.
- Bake for 15-20 minutes until the cheese is golden and bubbling.
- Scatter with coriander if using, then slice into quarters and serve.
Tips and Variations
You can use wraps that are past their best before date as long as they are still flexible. For a meaty version, add a tin of drained tuna or some cooked leftover chicken between the layers. If you do not have cumin or chilli powder, a spoonful of curry powder works surprisingly well too.
