Welsh Rarebit

Toasted bread under a molten mix of cheese, mustard and Worcestershire sauce - the original Welsh comfort food at about 55p a portion.

Ingredients
  

  • 8 slices thick cut white bread
  • 150g mature cheddar, grated
  • 30g butter
  • 30g plain flour
  • 150ml milk
  • 2 tsp English mustard
  • 2 tsp Worcestershire sauce
  • black pepper
  • 2 tomatoes, sliced, to serve

Method
 

  1. Toast the bread lightly so it holds its shape, then lay the slices on a grill pan.
  2. Gently melt the butter in a saucepan, stir in the flour and cook for 1 minute, then add the milk a little at a time, stirring until you have a smooth, thick sauce.
  3. Take off the heat and stir in the cheese, mustard, Worcestershire sauce and plenty of black pepper until you have a thick, glossy paste.
  4. Spoon the cheese mixture generously over each slice of toast, spreading it right to the edges.
  5. Grill for 4-5 minutes until bubbling, blistered and golden in patches. Serve straight away with the sliced tomato.
