Spicy Lentil and Tomato Pilaf

A fragrant one-pot rice dish with red lentils, tomatoes and warming spices. Costs 55p per portion and takes 30 minutes.

Ingredients
  

  • 200g basmati rice
  • 100g red lentils
  • 1 tin (400g) chopped tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1/2 tsp chilli flakes
  • 1 tsp salt
  • 2 tbsp oil
  • 500ml water

Method
 

  1. Rinse the rice and lentils in cold water until the water runs clear. Set aside.
  2. Heat the oil in a large pan with a lid. Add the cumin seeds and let them sizzle for 30 seconds.
  3. Add the onion and cook for 4-5 minutes until golden.
  4. Add the garlic, turmeric and chilli flakes. Stir and cook for 1 minute.
  5. Add the chopped tomatoes, rice, lentils, salt and water. Stir well.
  6. Bring to the boil, then reduce the heat to very low. Cover with a tight-fitting lid and cook for 20 minutes without lifting the lid.
  7. Remove from the heat and let it sit covered for 5 minutes. Fluff with a fork and serve.
