Spicy Butter Bean and Tomato Stew

Butter beans simmered in a smoky, spicy tomato sauce with peppers and onions. Ready in 25 minutes and costs under 60p a portion. Serve with bread or rice.

Ingredients
  

  • 2 tins (2x400g) butter beans, drained
  • 1 tin (400g) chopped tomatoes
  • 1 red pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp chilli flakes
  • 1 tbsp olive oil
  • 200ml vegetable stock
  • salt and pepper
  • crusty bread to serve

Method
 

  1. Heat the olive oil in a large pan over medium heat. Add the sliced onion and red pepper and cook for 5 minutes until softening.
  2. Add the minced garlic, smoked paprika and chilli flakes. Stir and cook for 1 minute until fragrant.
  3. Pour in the chopped tomatoes, drained butter beans and vegetable stock. Stir everything together.
  4. Bring to a simmer and cook for 15 minutes until the sauce has thickened and the flavours have melded together. Season well with salt and pepper.
  5. Serve in bowls with crusty bread for dipping, or over rice.
