Smoky Sweet Potato Tacos

Roasted sweet potato chunks with smoky spices in soft tortillas - a meat-free taco that costs under 65p per portion and is genuinely satisfying.

Ingredients
  

  • 2 medium sweet potatoes, peeled and cubed
  • 1 red onion, cut into wedges
  • 1 tbsp vegetable oil
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp chilli powder
  • 1 tin (400g) black beans, drained
  • 8 soft tortilla wraps
  • 1 tomato, diced
  • 50g cheddar cheese, grated
  • natural yoghurt and hot sauce to serve
  • salt and pepper

Method
 

  1. Preheat the oven to 200C/180C fan/Gas 6. Toss the sweet potato cubes and onion wedges with the oil, smoked paprika, cumin, chilli powder and a good pinch of salt.
  2. Spread on a baking tray and roast for 20-25 minutes until the sweet potato is tender and slightly crispy at the edges.
  3. Warm the black beans in a small pan or microwave. Season with salt and pepper.
  4. Warm the tortillas in a dry pan for 30 seconds each side.
  5. Fill the tortillas with roasted sweet potato, black beans, diced tomato and grated cheese. Add a dollop of yoghurt and a drizzle of hot sauce.
