Smoky Bean and Cheese Toastie

A crispy toasted sandwich filled with smoky baked beans and melted cheese. Ready in 10 minutes and costs under 80p per portion.

Ingredients
  

  • 4 slices thick white bread
  • 1 tin (400g) baked beans
  • 60g cheddar cheese, grated
  • 1 tsp smoked paprika
  • 2 tbsp butter, softened
  • salt and pepper

Method
 

  1. Tip the baked beans into a small saucepan and add the smoked paprika. Heat gently for 3-4 minutes until hot and bubbling. Stir occasionally.
  2. Mash the beans slightly with the back of a spoon so they are not too runny.
  3. Butter the outside of each slice of bread.
  4. Place two slices butter-side down. Divide the beans between them, spreading to the edges. Top with grated cheese and a pinch of pepper.
  5. Top with the remaining slices, butter-side up.
  6. Heat a frying pan over medium heat. Fry the toasties for 2-3 minutes on each side until golden brown and the cheese is melted.
