Lemon and Garlic Butter Bean Mash

Creamy butter beans mashed with garlic, lemon and olive oil. A protein-packed alternative to mashed potato at 65p per portion.

Ingredients
  

  • 2 tins (2x400g) butter beans, drained
  • 3 cloves garlic, minced
  • 1 lemon, zest and juice
  • 3 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp warm water
  • 1 tbsp fresh parsley, chopped (optional)

Method
 

  1. Heat 1 tablespoon of olive oil in a pan over medium heat. Add the minced garlic and cook for 1 minute until fragrant but not browned.
  2. Add the drained butter beans and thyme. Stir and cook for 2-3 minutes to warm through.
  3. Tip the beans into a bowl. Add the remaining olive oil, lemon zest, lemon juice, salt and pepper.
  4. Mash with a potato masher or fork until you get a rough, creamy texture. Add the warm water to loosen if needed.
  5. Taste and adjust seasoning. Top with chopped parsley if using.
  6. Serve warm as a side dish or on toast as a main.
