Creamy Mushroom and Garlic Toast

Chestnut mushrooms pan-fried with garlic and a splash of cream, piled onto thick buttered toast. A 15-minute meal that feels like something from a gastro pub for under 70p a portion.

Ingredients
  

  • 250g chestnut mushrooms, sliced
  • 2 thick slices bread
  • 2 cloves garlic, minced
  • 2 tbsp double cream
  • 1 tbsp butter
  • 1 tsp dried thyme
  • salt and black pepper
  • fresh parsley to garnish (optional)

Method
 

  1. Heat the butter in a frying pan over medium-high heat. Add the sliced mushrooms in a single layer and cook for 4-5 minutes without stirring so they get a good golden colour.
  2. Stir the mushrooms and add the minced garlic and thyme. Cook for 1 minute until the garlic is fragrant.
  3. Pour in the double cream and stir well. Simmer for 2 minutes until the cream thickens and coats the mushrooms. Season generously with salt and black pepper.
  4. Toast the bread until golden and butter it lightly.
  5. Spoon the creamy mushrooms over the toast and top with a few sprigs of fresh parsley if you have it.
