Courgette and Feta Fritters

Crispy golden fritters made from grated courgette and budget feta cheese. Ready in 15 minutes and costing under 60p a portion, these work as a light lunch or dinner with a side salad.

Ingredients
  

  • 2 courgettes, grated
  • 100g budget feta cheese, crumbled
  • 2 spring onions, finely sliced
  • 2 eggs, beaten
  • 3 tbsp plain flour
  • 1 tsp dried oregano
  • 3 tbsp vegetable oil for frying
  • salt and pepper
  • 4 tbsp natural yoghurt to serve
  • 1/2 lemon, juiced

Method
 

  1. Grate the courgettes coarsely and place in a clean tea towel. Squeeze out as much moisture as you can - this is the key to crispy fritters.
  2. Put the squeezed courgette in a bowl. Add the crumbled feta, spring onions, eggs, flour, oregano and a good grind of black pepper. Mix well.
  3. Heat the oil in a large frying pan over medium heat. Drop tablespoons of the mixture into the pan and flatten slightly with the back of a spoon.
  4. Cook for 3-4 minutes on each side until golden and crispy. You may need to do this in two batches.
  5. Drain on kitchen paper. Mix the natural yoghurt with the lemon juice and a pinch of salt to make a quick dressing.
  6. Serve the fritters warm with the lemon yoghurt drizzled over the top.
