Courgette and Cheese Fritters

Crispy golden fritters made from grated courgettes and budget cheese. A quick 15-minute meal that costs under 45p per portion and uses one of the cheapest vegetables in the supermarket.

Ingredients
  

  • 2 medium courgettes, grated
  • 1 egg, beaten
  • 3 tbsp plain flour
  • 75g cheddar cheese, grated
  • 1 spring onion, finely sliced
  • 1 tsp dried mixed herbs
  • 3 tbsp vegetable oil for frying
  • salt and pepper
  • 4 tbsp natural yoghurt (to serve)

Method
 

  1. Grate the courgettes and squeeze out as much moisture as possible with your hands or a clean tea towel - this is the key to crispy fritters.
  2. Put the grated courgette in a bowl with the egg, flour, cheese, spring onion, herbs and a good pinch of salt and pepper. Mix well.
  3. Heat the oil in a large frying pan over medium heat. Drop tablespoons of the mixture into the pan and flatten slightly.
  4. Cook for 3-4 minutes on each side until golden and crispy. You may need to do this in batches.
  5. Drain on kitchen paper and serve with a dollop of natural yoghurt.
