Budget Chicken and Mushroom Pasta

A creamy chicken and mushroom pasta that uses budget chicken thighs and tinned mushrooms. Under 1 per portion and on the table in 25 minutes.

Ingredients
  

  • 300g chicken thighs, diced
  • 1 tin (240g) mushrooms, drained and sliced
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp plain flour
  • 300ml chicken stock (from a cube)
  • 100ml milk
  • 1 tsp dried thyme
  • 1 tbsp oil
  • 400g pasta (any shape)
  • salt and pepper

Method
 

  1. Bring a large pan of salted water to the boil and cook the pasta according to pack instructions. Drain and set aside.
  2. Meanwhile, heat the oil in a large frying pan over medium-high heat. Add the diced chicken and fry for 5-6 minutes until golden on all sides.
  3. Add the onion and garlic. Cook for 3 minutes until the onion is soft.
  4. Add the drained mushrooms and thyme. Stir and cook for 2 minutes.
  5. Sprinkle the flour over the chicken and vegetables. Stir well and cook for 1 minute.
  6. Gradually pour in the chicken stock, stirring constantly to avoid lumps. Add the milk and bring to a simmer.
  7. Cook for 5 minutes until the sauce thickens. Season with salt and pepper.
  8. Toss the cooked pasta through the sauce and serve.
