Budget Beef Mince Stroganoff

A clever twist on the classic using cheap beef mince instead of steak. Creamy, savoury and on the table in 25 minutes for under 75p per portion.

Ingredients
  

  • 300g budget beef mince
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 200g chestnut mushrooms, sliced
  • 1 tbsp plain flour
  • 1 tbsp tomato puree
  • 1 tsp smoked paprika
  • 200ml beef stock
  • 2 tbsp natural yoghurt or creme fraiche
  • 1 tbsp vegetable oil
  • salt and black pepper
  • 300g rice or pasta (to serve)

Method
 

  1. Heat the oil in a large frying pan over medium-high heat. Add the mince and brown it for 5 minutes, breaking it up with a wooden spoon.
  2. Add the onion and cook for 3 minutes until soft. Add the garlic and mushrooms and cook for 4 minutes until the mushrooms have softened.
  3. Sprinkle over the flour and paprika, stir well and cook for 1 minute.
  4. Add the tomato puree and stock. Stir well and bring to a simmer. Cook for 10 minutes until the sauce has thickened.
  5. Remove from the heat and stir through the yoghurt or creme fraiche. Season with salt and plenty of black pepper.
  6. Serve over rice or pasta.
