Spiced Carrot and Coriander Soup

Carrots are consistently one of the cheapest vegetables in any UK supermarket, and this soup turns them into something bright, warming and flavoursful. A blender is the only specialist kit you need.

Ingredients
  

  • 500g carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 potato, diced
  • 750ml vegetable stock
  • 1 tbsp vegetable oil
  • small bunch fresh coriander

Method
 

  1. Heat the oil in a large saucepan. Add the onion and cook for 5 minutes until soft.
  2. Add the garlic, ground cumin and ground coriander. Cook for 1 minute until fragrant.
  3. Add the chopped carrots, potato and stock. Bring to the boil.
  4. Reduce heat and simmer for 20 minutes until the carrots are very tender.
  5. Blend until smooth using a stick blender or regular blender.
  6. Season with salt and pepper. Stir through most of the chopped coriander, reserving some to garnish.
